Ingredients (4 servings)
-
400 g Kuchenmehl
-
4 Stk. Eier
-
150 ml Vollmilch
-
250 g Bergkäse
-
3 Stk. Zwiebeln gelb
-
Salz, Pfeffer, Öl, Muskatnuss
Preparation
- Beat the flour, eggs, milk, a pinch of salt and some nutmeg in a bowl with a wooden spoon until a smooth, bubbling dough forms.
- Peel the onions, cut into thin rings and slowly fry in a pan with enough oil over medium heat until golden brown and crispy. Finely grate the mountain cheese.
- Bring plenty of salted water to a boil in a large pot. Press the dough in batches through a spaetzle sieve into the boiling water. As soon as the spaetzle float to the surface, lift them out with a slotted spoon.
- Layer the hot spaetzle alternately with the grated mountain cheese into a preheated bowl. Finally, top with the crispy fried onions and serve immediately.
