Ingredients (4 servings)
-
2 Stk. Melanzani
-
500 g Rinderfaschiertes
-
2 Stk. Zwiebeln
-
150 g Hirtenkäse
-
100 g Sauerrahm
-
Olivenöl, Salz, Pfeffer, Oregano
Preparation
- Preheat the oven to 200 degrees. Wash and halve the eggplants and carefully scoop out the flesh with a spoon, leaving a sturdy border. Finely dice the flesh and peel and chop the onions.
- Heat some oil in a pan and fry the minced beef until crumbly. Add the chopped onions and diced eggplant flesh and sauté for about 5 minutes.
- Stir the sour cream into the meat mixture and season generously with salt, pepper, and oregano.
- Place the hollowed-out eggplant halves into a baking dish, fill with the meat mixture, and sprinkle the crumbled shepherd cheese on top. Bake in the hot oven for about 25 minutes until golden brown.
